Mixed Vegetables

Ingredients-

  1. 100gms of pumpkin cut into cubed pieces
  2. 1 medium sized potato cut into cubed pieces
  3. 50gms ladies finger 1/2 inch size long pieces
  4. One medium size eggplant 1inch size long pieces
  5. 1small onion thick chopped
  6. 2,3 green chillies
  7. Panch foron or Bengali 5 whole spices
  8. 1 teaspoon cumin powder and turmeric mixed in 1/4th cup warm water
  9. 2 tablespoon oil
  10. Salt and sugar to taste

Steps-

All vegetables
Cumin powder in hot water
Onion, panch foron and green chilly

Heat the pan and oil.. splatter panch foron in hot oil..Now add onion and green chilly and stir for few minutes..

Add vegetables when onion gets little soft, and sprinkle some salt…

Cover the lid for 5 to 7 minutes… After 5 to 7mins, add the cumin powder, mix warm water and mix with the vegetables properly…Now close the lid again until vegetables get soft or cooked..

When vegetables get cooked uncover it and dry the water and serve the vegetable dry with roti or steamed rice..
